When my husband suggested we try Crested Butte Colorado for our ski trip this year I jumped at the chance. You see I had just read a New York Times article that described Crested Butte as the last inhabitable ski town in the United States.
The unassuming kick back atmosphere, un-crowded world-class slopes and did I mention sophisticated cuisine sounded too good to be true and too good to pass up. Well, the Times was right on all counts.
After a vigorous day in the snow, the Timberline restaurant offered just the genteel dining experience I was hoping for. We had a question about the wine list and general manager, Robb Horesovsky, came over to answer it personally. We asked him to describe the evening's featured wine, an Australian Chardonnay Bin 124.
He went one better; he opened a bottle, poured us a glass and asked us to describe it to him. The personal attention didn’t end there.
When he found out my husband is a vegetarian, he suggested the grilled polenta braised apples and cabbage covered in a mushroom and tomato sauté. Chef/owner, Tim Egelhoff prepared light and delicious beautifully presented meal. My husband loved it and I took several tastes. There were a number of compelling selections including Grilled Local Trout, Caribou Medallions, and Honey Glazed Duckling, but I wanted to try the Tomichi Creek Ranch Burger. It's actually a chopped steak of local beef served on a slice of house-baked bread with caramelized onions and veal demi-glaze. It was the best burger I ever had!
For desert we shared their signature chocolate soufflé, (It takes 20 minutes so order it ahead of time) which was light and scrumptious. There are a plenty of lighter fare selections peppered into the fine Rocky Mountain nouvelle menu so you can eat healthy and still enjoy the finer things.
Timberline Restaurant is located at 201 Elk Ave, Crested Butte's historic main street. It's open nightly for dinner from 5:30-10 pm. during the winter season. Check for other seasonal hours.
